3 cups barley flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 Tbsp Ener-G Egg Replacer, prepared
1/4 cup water
1 to 1 1/4 cups canola oil
1 tsp vanilla
3 cups peeled and chopped apples
2 cups sugar
Preheat oven to 350 °F. Oil a 9x13 pan.
In large bowl, mix together flour, baking soda, salt, and cinnamon and set aside.
Mix together egg replacer and water. Mix with remaining ingredients. Stir in flour mixture. Put batter into pan.
Bake 45-50 minutes.
Can use wheat flour instead of barley. Can use 2 eggs instead of egg replacer/water mixture.
Can use replace a little less than half the suger with fructose.

Hello. I am wondering how you can use vanilla for the apple cake recipe when vanilla is usually extracted with corn alcohol. Do you know of a brand of vanilla that is corn free?
