1 1/2 cups all purpose flour
1 cup sugar
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 cup coarsely shredded carrots
3/4 cup water
1/3 cup oil
1 tsp vanilla
Heat oven to 350 °F.
Mix dry ingredients together. Add carrots and stir. Add remaining ingredients and stir to blend. Pour into 8 or 9 inch greased pan and bake 25 to 30 minutes.
Easy and delicious.

This is a very simple and super tasty cake! Thank you for this recipe! It is not easy to make a tasty cake to accommodate for all allergies my kids have.... and this cake - they just love:)
This looks great! What did you use for the frosting?
Unfortunately, she didn't share the frosting recipe! I usually use cream cheese frosting on carrot cake. I've made it using a regular recipe and subbing out dairy free cream cheese and margarine. What do you need to avoid?
Just found out am sensitive to eggs yolks & whites but still want my veggie omelette for brekkie. ...anything i can use for substitute? Would egg replacer work?
