1 1/2 lb sweet potatoes, cooked, peeled, and quartered
1/2 cup maple syrup
1/2 cup orange juice
3 Tbsp margarine
1 Tbsp corn starch
1 tsp grated orange peel


Preheat oven to 350 °F.

Arrange sweet potatoes in 1 1/2-quart shallow baking dish. Combine remaining ingredients; pour over potatoes.

Bake 40 minutes or until hot and sauce is thickened, basting frequently.

Refrigerate leftovers.



If avoiding corn, substitute cornstarch with another starch. This is for thickening.

Verify that your maple syrup is safe for your allergy set. Some use additives and defoaming agents that can contain allergens.

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.

Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
