1 cup confectioners (powdered) sugar
1 pkg cream cheese
1 tsp vanilla
1 cup heavy cream
1 graham cracker pie crust
Blend confectioner's sugar, cream cheese and vanilla in the blender.
Separately, whip the heavy cream.
Fold whipped cream into sugar/cream cheese mixture. Pour into in graham cracker crust and chill for an hour or so. Then serve.
Verify the ingredients of a purchased graham cracker crust or make one from safe ingredients.

Hi Shaun - there are some brands of graham crackers that do not contain soy that you can use to make your own crust. This recipe is pretty easy - www.kidswithfoodallergies.org/.../recipe-page.aspx.
