Ingredients

2/3 cup rice flour
2/3 cup tapioca flour
2/3 cup potato starch or cornstarch
1 1/2 cup sugar
1/2 cup margarine or shortening
1 cup rice milk
3 1/2 tsp baking powder
1 tsp xanthan gum
1 tsp salt
1 tsp vanilla
4 Tbsp Ener-G Egg Replacer
6 Tbsp water

Directions

Mix egg replacer and water. Beat all ingredients together in large bowl until smooth.

Grease 2 8x8" pans and divide batter between them.

Bake at 350 °F for 30-35 minutes or until toothpick inserted in center comes out clean.

This recipe can also make cupcakes. Recipe makes 30-36 cupcakes, or make 1 8x8" cake and about 15-18 cupcakes. Bake cupcakes at 350 °F for 20-25 minutes.

Substitutions
