In large bowl mix all ingredients except spinach.

On sheet of waxed paper shape meat mixture into 1/4" thick rectangle. Spread spinach over meat rectangle, leaving 1" border around.

Using a short end, roll mixture up into a jelly-roll. Pinch seams to seal.

Place meatloaf seam side down on prepared baking sheet. Bake 1 hour. Place on cutting board. Let stand 5 minutes. Slice and serve.

Alternatives to spinach:

- chopped broccoli

- 2 cups sauteed mushrooms plus 1/2 cup ham

Check your ground meat for any additives, especially if using ground turkey which usually has added flavorings. Ground pork sometimes has added lemon juice.
