2 1/4 cups flour
4 tsp baking powder
1 tsp salt
2 Tbsp sugar
2 eggs or equivalent replacement
2 1/4 cups milk or dairy-free milk alternative
1/2 cup oil

Mix dry ingredients together. Add all liquid ingredients and mix just until blended. Bake on waffle maker according to manufacturers directions.

This recipe works well with just a quick spray of oil on the waffle maker.

These freeze very well, and can be warmed in the toaster (for a crispy waffle) or microwave (for a soft waffle).

Can be made with soy milk or rice milk.

Ener-G Egg Replacer can be used to replace eggs.

For lower fat, cut the oil in half and add a bit more water with the egg replacer to compensate for the liquid.

Other additions:

A couple of tablespoons of wheat germ.
A teaspoon of vanilla works in this recipe.

States egg and milk free both ingredients present, would be nice for the recipes stating they are free of an ingredient to actually be free of it instead of click here and try to find something to replace the ingredients....

I agree, that's frustrating....but did you know that you can pre-select your allergens before you hit "search"?
