1 lb ground beef (80/20)
1 lb ground pork
1 cup white wine
4 cups tomato sauce
1 Tbsp salt
1/2 Tbsp black pepper
3 Tbsp olive oil
1/2 chopped onion
1/2 chopped carrot
2 cloves garlic, chopped
In a pot heat up the oil, then add the beef, pork, onions, garlic and carrots. This is the most important step for a good Bolognese. Let all of the ingredients cook very well to consume all of the natural juices. When the meat is nice and brown add the White Wine to dissolve the brown spots on the bottom of the pot.
Let it reduce for a minute or two then add the tomato sauce, salt and pepper. Bring it to a simmer and let it cook on low heat for approximately 30 minutes.
Today I served it on Brown Rice Fusilli Pasta!

This recipe makes 8 cups of sauce. You can save it in the fridge for up to a week or you can freeze it in ziplock bags and have it ready whenever you need it. This will come in handy as school starts in the upcoming weeks!

I doubled this recipe as we have a large family - had to put about 3 Tbsp + of Dijon and I added Honey Mustard to the dressing as it was WAY TOO vinegary. That was all I could taste. After those adjustments it tasted much better.
