Ingredients

1 8-12 oz bag frozen spinach
1 pkg Mori-Nu tofu (extra firm)
1 Tbsp garam masala
3/4 cup starch of your choice
3-5 cups cooking oil
1 tsp turmeric
2 Tbsp dairy-free sour cream sub or dairy-free milk
1/2 onion
2 Tbsp margarine

Directions

Cut tofu into several 1 inch cubes.

Chop onion and add to saucepan. Saute in margarine until golden brown. Add frozen spinach. Cook over low-medium heat.

Fill separate saucepan with oil. Heat over medium-high heat until ready for frying. Dip tofu cubes into starch, coating entirely. Add to frying oil. Continue adding cubes to frying oil. Fry until the starch turns into a crust around the cube. Remove from oil and set aside.

When spinach is fully cooked, add garam masala, turmeric, and dairy-free sour cream or milk substitute. Stir until creamy. Add the tofu cubes to the spinach mixture.

Notes

If you love Indian food, this is a great substitute for traditional palak paneer.

Substitutions

Soy sour cream substitute contains corn. If you need to avoid corn, use a different milk substitute although it won't be as thick and creamy.

Make your own garam masala or be sure to verify that any commercial version is free of your allergens and cross contamination.

Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.

Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.
