Ingredients

1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
3/4 cup maple syrup
3/4 cup water
5 Tbsp oil

Directions

Preheat oven to 350 °F.

Mix together flour, baking soda and salt. Add in syrup, water and oil.

Mix (I mix until there are no more bumps), pour into cupcake holders and bake for 23 minutes (mini cupcakes) 24 minutes (regular cupcakes).

Notes

My son is on a very limited diet of 10 foods and this is a very quick and easy cake for him. This is modified from the original Wacky Cake recipe.

Substitutions

I use olive oil and Prefer Grade B Syrup.

Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains. These were a big hit, even with the non-allergic. I think they could be kicked up a notch if you added something to them, like berries, chopped fruit or nuts (if you can have them). I used canola oil and syrup we made from our own trees.
