Mandarin Chicken Salad

1/2 cup juice from an 11 oz can of mandarin oranges
3 Tbsp vegetable oil
2 Tbsp balsamic vinegar
1 Tbsp honey
juice from one orange
2 cloves garlic, minced
1 tsp thyme
1/2 tsp cloves
salt and pepper to taste
2 boneless, skinless chicken breasts
16 oz fresh, mixed salad greens
2 11 oz cans of mandarin oranges
1/2 - 1 cup dried cranberries

For marinade and dressing, combine juices, vegetable oil, vinegar, honey, garlic, thyme, cloves, salt and pepper.
Marinate chicken in 1/4 to 1/2 cup of marinade (reserve enough to use for salad dressing) for up to 4 hours. Grill chicken until done, then cut into bite sized pieces.
Fill large bowls with salad greens, top with croutons, arrange mandarin orange segments around the perimeter of the salad bowls, sprinkle dried cranberries in the center. Top with chicken and dressing. Enjoy!
The marinade/dressing is also very tasty tossed with pasta.
Use gluten-free croutons to avoid wheat and gluten.
If avoiding corn, select canned Mandarin oranges in sugar syrup.
Use a neutral vegetable oil that is safe for your needs.
Select chicken that is does not have added seasoning - look for minimally processed chicken.
