3 boneless chicken breast halves
1/2 onion, sliced thinly
2 Tbsp canola oil
1 1/2 tsp cumin
dash pepper
1 tsp dried mushroom powder OR 4-5 sliced mushrooms
1/4 cup brown sugar
In saucepan, heat oil. Saute onions and mushrooms or mushroom powder for a few minutes until onions are translucent. Stir in spices and brown sugar.
Put chicken breasts in pan with onions. Cook until cooked through, turning after about 5 minutes.
Serve with the onions and sauce drizzled over.
Good with rice.
Annika loves onions. This was something she came up with when the main dinner wasn't safe - she had chicken breasts and carte blanche to do whatever she wanted! The onions were her idea, and then I helped with some suggestions on spices - cumin, yes; lemon pepper, no.

I tweaked this a bit. I only had boneless, skinless thighs on hand. I cut about 5 of them into strips for this. I also added red bell pepper with the onions and mushrooms and about 1/8 cup water before the spices and a little less of the brown sugar (my family isn't big on sweet and the bell pepper and onion usually sweetens up a dish).
I went to take a pic after dinner and found no chicken left to take a picture of. Big hit here. Definitely saving this.
