7 cups pears, pureed
1 1/4 cup simple syrup (see notes)
1/4 cup lemon juice (optional)
1 tsp vanilla (optional)
1/2 tsp salt
Process pears until smooth and press through a sieve or strainer to make very smooth. Chill thoroughly.
Chill simple syrup thoroughly. Simple syrup is equal parts sugar and water that is heated until sugar is completely dissolved. 1 cup sugar and 1 cup water will yield 1 1/2 cups simple syrup.
Put pears, simple syrup, salt, and vanilla and lemon juice (if using) into ice cream maker and chill according to manufacturer's directions.
This one tastes very nice if served before it freezes completely.
Many fruits can be substituted. Frozen berries that are brought up to room temperature for sieving will be nice and mushy. Be sure to chill in the fridge again before starting your sorbet.
Apples should be cooked.
