3 lb boneless chicken breasts
1 1/4 cups apple cider (divided)
1 16 oz pkg frozen cranberries
1 cup sugar
1 tsp garlic
2 Tbsp dried minced onion
to taste salt and pepper
In large frypan, heat 1/4 cup apple cider with garlic and minced onion. Saute chicken breasts.
Separately, heat cranberries, 1 cup apple cider, and sugar til boiling. When berries pop, set aside.
In large casserole dish, place chicken breasts and juice. Add cranberry sauce.
Bake at 350 °F for an hour.
This makes chicken with a juice, not a thickened sauce. To make a thicker sauce, remove about a cup of the juice, and stir in 1 Tbsp of cornstarch.
This tastes like a turkey and cranberry sauce sandwich, without the bread.

If avoiding corn, do not use cornstarch to thicken sauce. Omit or try another thickener.
