Your photo should meet the following requirements:

18 oz baby food pears
1/4 cup canola oil
3/4 cup sugar
1 1/2 tsp baking soda
1 tsp salt
1 1/2 cups white rice flour
3/4 cup oat flour


Mix pears, oil, and sugar well. Sift remaining ingredients and stir in. Mix well (do not beat).

Let batter sit for 15-20 minutes. This will allow for better rising.

Put into mini-muffin pans and bake at 350 °F (325 if using dark pans) for about 12 to 15 minutes or until toothpick comes out clean. Makes 3 to 4 dozen


These taste good but can be a bit grainy.


The baby food pears can be replaced with 1 1/2 cups of any pureed fruit. I've used applesauce, dutch apple, and canned pumpkin. For banana, use 3 medium bananas (about 1 1/2 cups) and increase sugar to 1 cup.

Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains.
