Banana Wacky Cake

Your photo should meet the following requirements:

  • It must be in jpg/jpeg format

1/4 cup sorghum flour
1/2 cup brown rice flour
1/2 cup potato starch
1/4 cup garbanzo bean flour
1/4 cup tapioca starch
1/3 cup sugar
1/2 tsp salt
1 tsp guar or xanthan gum
1 tsp baking soda
3/4 tsp cinnamon
1 Tbsp lemon juice or vinegar
2 Tbsp oil
1/2 cup apple juice
1/2 cup rice milk
1/4 cup mashed bananas
brown sugar


Blend all ingredients. Spoon by 1/4 cups into greased muffin tins. Sprinkle brown sugar on top. Bake at 350 °F for 20 minutes.

These came out awesome. I didn't have all the individual flours, but I had garbanzo flour, so I improvised and used 1 1/2 cups King Arthur gluten free flour and 1/4 cup garbanzo flour. We also added some enjoy life chocolate chips. Probably the best muffins we've ever made!
