6 medium tortillas (wheat or rice based)
1 1/2 cups diced cooked chicken or turkey
2 apples, chopped
1/2 avocado, chopped
3 Tbsp raisins
1/2 cup shredded dairy or soy cheddar cheese (optional)
1/2 cup dairy or soy mozzarella cheese (optional)
1 large or 3 small tomatoes, chopped
3/4 cup salsa, preferably with a fruit flavor (I used pineapple-peach salsa)
dairy, soy, or rice sour cream (optional)
pan spray or oil
In large bowl, mix all ingredients except tortillas and sour cream. Put about 1/2 cup of mixture in the middle of each tortilla, and fold tortilla in half. Place on pan-sprayed cookie sheet.
Bake at 400 °F for 8 minutes. Turn over, and bake an additional 8 minutes. Cut each quesadilla into thirds for easier handling, and serve topped with sour cream if desired.
I used rice tortillas and no cheese, and added rice sour cream, to avoid top 8. Note that rice sour cream contains corn.
