Bean, Corn, and Mango Salsa

Ingredients

1 1/2 cup cooked corn
1 1/2 cup canned black beans
2 cloves garlic, minced
2 mangoes, peeled and chopped
1 red bell pepper, cored and diced
1 red onion, diced
1/4 cup fresh cilantro, chopped
1 Tbsp ground cumin
1 Tbsp cayenne
2 Tbsp olive oil
8 Tbsp lime or pineapple juice

Directions

Rinse beans well, place in a large bowl with corn and mix with garlic and salt. Add mango, bell pepper, and onion and mix well.

In another bowl, combine cilantro, cumin, cayenne, olive oil, and juice, and whisk together until combined. I do this in a bottle and put the lid on and vigorously shake it.

Pour over bean, corn, and mango mixture and toss well. Let this sit for an hour before serving.

Substitutions

As a variation on this, I make the salsa without the beans and mangoes and substitute scallions for the onions.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
