Vegan Mock Mac N Cheese

Ingredients

1 16 oz pkg small shaped pasta – wheat, corn, rice, or quinoa
1 10 oz pkg frozen winter squash, thawed
2 Tbsp oil
2 cups milk alternative
to taste sea salt (optional)
1/4 cup Red Star Vegetarian nutritional yeast (optional)
flax seed meal (optional)
sunflower seed meal (optional)

Directions

Prepare pasta according to package directions.

Separately, in large saucepan heat milk alternative. Add thawed squash, oil, salt, and optional nutritional yeast.

The sauce will come out very creamy and bright orange, resembling cheese sauce.

Pour noodles into sauce and stir to coat well.

Optional: Sprinkle flax seed meal or sunflower seed meal on top.

Notes

Red Star Vegetarian Support Nutritional Yeast and Bragg’s both offer dairy-free nutritional yeast.
