Ingredients

2 1/4 cups flour
4 tsp baking powder
1 tsp salt
2 Tbsp sugar
2 eggs or equivalent replacement
2 1/4 cups milk or dairy-free milk alternative
1/2 cup oil

Directions

Mix dry ingredients together. Add all liquid ingredients and mix just until blended. Bake on waffle maker according to manufacturers directions.

Notes

This recipe works well with just a quick spray of oil on the waffle maker.

These freeze very well, and can be warmed in the toaster (for a crispy waffle) or microwave (for a soft waffle).

Substitutions

Can be made with soy milk or rice milk.

Ener-G Egg Replacer can be used to replace eggs.

For lower fat, cut the oil in half and add a bit more water with the egg replacer to compensate for the liquid.

Other additions:

A couple of tablespoons of wheat germ.
A teaspoon of vanilla works in this recipe.
