Yummy Squash or Pumpkin Dinner

Ingredients

1 4-6 lb squash or pumpkin
1 very small onion, chopped
3-5 apples, peeled, cored and chopped
1/3 cup prunes or other dried fruit, chopped small
1/2 tsp basil dried or 1 tsp fresh
1/2-1 lb ground pork, beef or turkey
1/2-1 cup water or stock
3 Tbsp oil
1/4-1/2 tsp garlic powder
1 cup quinoa or pasta

Directions

Preheat your oven to 350 °F. Cut off top of squash/pumpkin. Than cut into quarters. Scrape out the stringy pulp and seeds. Place in a baking dish with flesh side down. Put about a 1/2 inch of water in the pan. Cover with foil and bake till tender, about 1-2 hrs.

Heat oil in heavy pan. I used a Dutch oven. Fry the meat, onion and apple till tender. About15 mins. Add remaining ingredients cover and bring to a boil. Reduce heat and simmer for 30 mins stir so it doesn’t stick.

Drain the squash/pumpkin when done and soft. Scoop out the tender flesh, discard skins, than mix with the meat mixture. Put back in baking dish and cook for 15-20 mins till heated or just keep on the stove.

Notes

If you are giving this to a younger baby than puree it to the desired constancy. But this meal makes a great finger food self feeding meal for older babies 12+!! I liked adding the quinoa as it make it thicker and some corn elbow pasta. Hope your lil one enjoys it!!

Substitutions

For a vegetarian option, cooked pinto beans instead of the ground meat.
