Ingredients

1 cup coconut oil
1 1/2 cup powdered sugar
1/4 cup vanilla powder
1 tbsp rice milk

Directions

Add the coconut oil, powdered sugar, and vanilla powder to a mixing bowl. I recommend a stand mixer, as the coconut oil takes a long time to cream. Cream the coconut oil and sugar and vanilla until creamy. (This can take several minutes) Add the rice milk slowly while stirring. Continue beating frosting until all coconut oil lumps are gone- it’s worth it – this is a delicious frosting!

Substitutions

Any milk will work – no need to use rice milk specifically.

Vanilla powder is made of dextrose and vanilla extract. If you can’t find vanilla powder, you can use liquid extract (1-2 tsp), but the result is not as nice. You will need to lower the amount of milk or increase powdered sugar to compensate.

Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy, consult your physician to find out if you need to avoid coconut.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.
