Ingredients

2/3 cup rice flour
1/3 cup potato starch
1 tsp xanthan gum
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
1/4 cup margarine
6 Tbsp sugar
2-4 Tbsp water

Directions

Cream margarine and sugar. Add dry ingredients, then water. Start with 2 Tbsp water and add more as needed to achieve correct texture.

Pat into cookie shapes on a baking sheet.

Bake at 350 °F for 11 minutes.
