Millet Banana Muffins

Ingredients

3 ripe (or overripe) bananas
1/4 cup orange juice
1/4 cup canola oil
3/4 cup sugar
2 Tbsp ground flaxseed
1 cup millet flour
1 cup white rice flour
1/2 tsp xanthan gum
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Directions

Preheat oven to 350 °F.

Mash bananas in a medium mixing bowl. Add orange juice, canola oil, sugar and flaxseed.

In a separate bowl, combine millet flour, rice flour, xanthan gum, baking soda, baking powder and salt. Add flour mixture to banana mixture and stir until combined.

Spoon into paper lined muffin tins. Bake 25-30 minutes.

Makes one dozen.

Notes

These are crumbly without the xanthan gum and flaxseed.
