Ingredients

1 cup soy butter
1 cup corn syrup
1 cup sugar
6 cups crispy rice cereal
2 cups chocolate chips
4 Tbsp soy or other milk alternative

Directions

Mix soy butter, corn syrup and sugar together in double boiler. Heat and mix until smooth. Mix into rice cereal and press into 9x13" pan. Cool.

Heat chocolate chips and milk alternative in double boiler until melted and spread over rice cereal. Cool.

Cut into squares.

Notes

This is an adaptation of Scotch-A-Roos. The original calls for a combination of butterscotch and chocolate chips, but there aren't any dairy free butterscotch chips available so I doubled the chocolate chips.
