Ingredients

16 oz frozen, shelled edamame
3/4 cup chopped fresh cilantro or flat leaf parsley
1 small red onion, finely chopped
2 small skinny chili peppers, minced
2-3 cloves garlic, minced
1/4 cup extra-virgin olive oil
1/4 cup fresh lime juice (2 juicy limes)
1 Tbsp sugar or honey
to taste kosher salt and freshly ground pepper
lime slices to garnish (optional)

Directions

Place the edamame in a colander and rinse them under hot running water until they are mostly thawed, abut 30 seconds.

Put all ingredients in food processor along with 2 tablespoons water and coarsely puree, leaving some chunks. Adjust seasonings.

Transfer to serving bowl and place lime slices on sides if you like. Serve immediately or refrigerate and serve within a few hours.

Notes

This is similar to guacamole but made with edamame. You can eat it with raw veggies, breads, chips, pretzels, etc.
