1 recipe Shredded Sesame Chicken
1 rib celery, diced or thinly sliced on the diagonal
1/2 red pepper, diced or julliened
shredded lettuce
cilantro (optional)

Prepare Shredded Sesame Chicken adding celery and pepper with dressing. Chill for at least an hour. Serve on a bed of shredded lettuce. Garnish with cilantro.

This makes a great appetizer salad or a light lunch. This recipe uses Shredded Sesame Chicken, but you could use leftover chicken and combine it with the dressing ingredients from that recipe.
