Kay's Carrot Cake

 

 Ingredients  
1 1/2 cups all purpose flour
1 cup sugar
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 cup coarsely shredded carrots
3/4 cup water
1/3 cup oil
1 tsp vanilla


 Directions  
Heat oven to 350 °F.

Mix dry ingredients together. Add carrots and stir. Add remaining ingredients and stir to blend. Pour into 8 or 9 inch greased pan and bake 25 to 30 minutes.


 Notes  
Easy and delicious.


 Substitutions

This is a very simple and super tasty cake! Thank you for this recipe! It is not easy to make a tasty cake to accommodate for all allergies my kids have.... and this cake - they just loveSmile

Unfortunately, she didn't share the frosting recipe!  I usually use cream cheese frosting on carrot cake.  I've made it using a regular recipe and subbing out dairy free cream cheese and margarine.  What do you need to avoid?

Just found out am sensitive to eggs yolks & whites but still want my veggie omelette for brekkie. ...anything i can use for substitute? Would egg replacer work?

There are a few different options for getting an omelet - none will be quite the same.  You can scramble tofu with veggies.  My suggestion would be to post on our Food & Cooking forum and ask for suggestions. community.kidswithfoodallergies.org/.../food_and_cooking
