|3/4 cup cornmeal
1/2 cup gluten-free flour blend
1 tsp xanthan gum
1 tsp baking powder
1/2 tsp cinnamon
dash ground red pepper or to taste
3 medium bananas, mashed
1 1/2 Tbsp Egg Replacer mixed with 2 Tbsp water
2 Tbsp rice milk
2 Tbsp canola oil
|Mix all ingredients together. This makes a very thick batter.
Panspray cookie sheet. Set aside. Preheat oven to 400 degrees F.
Heat large skillet or griddle to medium high. Grease or panspray griddle.
Using large serving spoon (approximately 2 tablespoons)for each, spoon 4 or 5 spoons of dough onto griddle, flattening slightly. Cook about 1 1/2 to 2 minutes; flip and cook other side. Remove to prepared cookie sheet, and spoon on remaining batter. This will make 8 to 10 fritters.
Bake fritters 8-10 minutes until firm.
