1 box cake mix (makes 2 - 9 inch layers)
1 sm box instant pudding mix
6 Tbsp flour
1 tsp baking powder
1 12 oz can unflavored seltzer water
1/3 cup melted shortening

Combine dry ingredients. Add seltzer and melted shortening. Mix with an electric mixer until well blended. Bake at 350 °F 18 minutes for cupcakes, 30 minutes for 2-8 inch round pans.

The batter will be much thicker than "regular" cake mix.


It is unknown whether this will work with soy and corn free cake and pudding mixes.

Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains. Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.
