Medical Advisory Team Update
 
Welcome to Todd Green M.D., who has joined Kids With Food Allergies' Medical Advisory Team.

Dr. Green is an Assistant Professor of Pediatrics at the Children's Hospital of Pittsburgh in Pittsburgh, PA. He grew up in Pittsburgh and earned his undergraduate degree from Yale University, then returned to the University of Pittsburgh for medical school. He completed a residency in Pediatrics at the Barbara Bush Children's Hospital in Portland, Maine. He developed an interest in food allergy and performed clinical research in this area during his fellowship in Allergy and Immunology at Duke University Medical Center in Durham, North Carolina. He continues to enjoy working with food allergic patients and their families at the Children's Hospital of Pittsburgh, where he has been active in helping to expand the food allergy program there.

Dr. Green will be joining his colleagues, Dr. Roger Friedman and Dr. David Hauswirth fellow allergists on our Medical Advisory Team, as well as Sherry Jenkins, Pharm. D., Debra Indorato, R.D., L.D.N. and me.

We appreciate Dr. Green accepting our invitation to join our Medical Advisory Team and look forward to his assistance as we work on expanding our educational program offerings in 2008.

  • Taking care of your family during the holidays



  • On top of the usual holiday shopping and baking routines, we find ourselves jumping through the extra hoops of baking and cooking for our children's special events at school; attending the events to make sure they are safe; planning and attending family or social gatherings; and probably even coordinating visits to relatives or making other out-of-town travel plans. Many of us also do some extra shopping and gift giving for those special people who've taken such good care of our children at school, in daycare or at home. It's no wonder we feel overwhelmed!

    Do set aside some special "me" time at this time of year. This benefits not only yourself, but also your family. Take a little time to rejuvenate so you can really celebrate the joy of the season and the success you've had in raising and caring for your child. Find a way to relax that works best for you, whether it's taking a bubble bath, going to the gym, or just stealing some alone time to shop without children in tow. Creating this special time will reinvigorate you. You've no doubt worked hard all year long and you deserve it!

    In all of the hustle and bustle at this time of year, do not let your guard down regarding safety. Be sure to inform restaurants, party hosts and family members of your child's food allergies. Don't take any chances: verify all ingredients and read all labels to ensure safety. Be alert for open food displays, especially nuts, candies and chocolates, in unexpected places like stores and offices. Many stores this time of year have samples out to boost sales of those food products. We must remain observant and vigilant at this time of year to keep our children safe.

Holiday Baking

No matter your family's traditional holiday foods, there is probably a recipe in the Safe Eats Recipe Database. Here are a few recipes to make your holiday baking an allergy-safe hit. For more recipes to make your cooking easier, from breakfast through dessert, visit our Safe Eats Recipe Database.

Reminder: These are recipes donated by members and have not been tested in a test kitchen. Be sure to verify the safety of all ingredients.

Kay's Carrot Cake

Made without milk, soy, peanut, egg, tree nut, corn, fish, shellfish, sesame.

Ingredients
1 1/2 cups all purpose flour
1 cup sugar
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 cup coarsely shredded carrots
3/4 cup water
1/3 cup oil
1 tsp vanilla

Instructions
Heat oven to 350 degrees F.

Mix dry ingredients together. Add carrots and stir. Add remaining ingredients and stir to blend. Pour into 8 or 9 inch greased pan and bake 25 to 30 minutes.

Substitutions
Use soy and corn free ingredients as needed.

Meg's Roll Out Cookies

Recipe Created by Meg
Made without milk, soy, peanut, tree nut, wheat, gluten, egg, fish, shellfish, corn, and sesame

Ingredients
1 cup rice flour
1 cup tapioca starch
1 cup potato starch
1 tsp baking powder (for dry ingredients)
1 tsp salt
2 3/4 tsp xanthan gum
1 1/4 cups sugar
1 cup + 2 Tbsp Spectrum Shortening
1 1/2 Tbsp oil
1 tsp baking powder (for egg replacer)
1 1/2 Tbsp water
2 Tbsp vanilla
3/4 cup or more additional potato starch
paste food coloring (optional)

Instructions
Preheat oven to 350 degrees F.

In a bowl, stir the dry ingredients (rice flour, tapioca and potato starches, baking powder, salt and xanthan gum) together.

In a separate bowl, cream shortening and sugar together until fluffy. Scrape down sides. Mix together oil, baking powder and water. This is your egg substitute. Add egg substitute and vanilla, and continue beating. Add flour mix slowly and stir (LOW speed) until completely combined.

Dough will be very wet/sticky--it will remind you of cake frosting. Add potato starch, 1-2 Tbsp at a time, until dough is thick enough to turn out onto counter dusted with potato starch. (Though it will stick mostly to itself and not your fingers, you will have to use spatula to get dregs out of bowl.) Begin kneading dough, adding potato starch as needed until dough is thick/dry enough to roll out.

Add food color now, if desired. Just knead in until dough is uniform in color. If it's not enough color, knead in more. No gluten means you can't overwork dough.

Roll out dough to 1/4 inch thick, and cut cookies. Place on greased or parchment lined cookie sheets. Bake for 15-17 minutes. Remove from oven and cool slightly on pan before transferring to wire rack.

Substitutions
You can use softened margarine for these, but then you have to deal with chilling the dough. Since shortening is solid at room temperature you can mix/roll/bake without stopping.

If not avoiding egg, the egg replacer mixture (oil/baking powder/water) can be replaced with 1 egg.

Use dairy, soy, egg, corn, wheat and/or gluten free ingredients as needed.
