Last chance for formula survey!
SKIM Analytical Healthcare is conducting a market research study on behalf of a formula company, and is inviting subscribers and members of Kids With Food Allergies to participate. The purpose of the survey is to understand opinions and
attitudes towards specialized nutritional products for cow/soy milk allergy, multiple food allergies, or allergy-induced gastrointestinal issues (such as short bowel syndrome, eosinophilic esophagitis, gastroesophageal reflux, milk/soy
protein intolerance MSPI, multiple food intolerences and eosinophilic gastroenteritis).
We hope that you will be willing to participate in the survey. It will take approximately 30 minutes to complete. If you qualify and complete the survey, you will receive $10 for successfully completing the survey. Or if you prefer, you
can donate your check to Kids With Food Allergies.
Please be assured that the results of this survey will be used for market research purposes only and all responses will be kept in strictest confidence. The information you provide will be used in aggregate and not reported on an
individual level.

KFA survey reveals top challenges of raising children with food allergies
Parents of food-allergic kids cite nutrition, safety and education as top concerns, with stress, fear and isolation common among many food allergy families, according to a new survey conducted by national nonprofit Kids With Food
Allergies.

Food Allergy Awareness Week May 13-19
This week is Food Allergy Awareness Week nationwide. We applaud those of you who are making special efforts in your community raise awareness this week about food allergies, including those of you who have worked to obtain proclamations
in your respective states to declare Food Allergy Awareness Week as well. More information about Food Allergy Awareness Week is on the Web site of the
Food Allergy and Anaphylaxis Network.
Activities for you: visit our Web site to send a free food allergy awareness
e-card, or go to the Web site of the
Food Allergy Project to find out how to contact your legislators to urge them to support more funding for research to find a cure for food allergies.
Holiday card artwork
We will be creating another holiday card this year and invite children to submit their creations! We've already received some talented work from children, and will continue to accept entries until the end of June. Please use regular 8.5
x 11 inch sheet of paper for entries and send them to our business mailing address located on the left hand column of this newsletter. Thank you!

Iron Chef KFA - spring 2007 battle |
|
|
We have another winner of our latest KFA Iron Chef competition, the Battle Brunch! The secret without ingredients were dairy, eggs, and wheat. We had five fantastic
recipes submitted that ranged from cinnamon rolls to ABC Potato Salad.
The winning recipe in this contest was Cinnamon Rolls, submitted by heythereheather. It has already received rave reviews from those who've tried making them.

Oatmeal Breakfast Bars
Recipe Created By: Devyani
Made without milk, peanut, egg, soy, tree nut, wheat, corn, fish, shellfish, sesame.
Ingredients
2 cups uncooked rolled oats
1 1/2 cups oat flour
1 cup (packed) currants, raisins, or other dried fruit
1/4 cup white or brown sugar
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup vegetable oil
1/4 cup sesame seeds or small nut Pieces (optional)
1 cup apple juice
Instructions
If fruit pieces are hard, set them in a bit of hot water to moisten.
Preheat oven to 375 degrees F. Grease a 9x13" pan, or two 8x8" pans. Combine all ingredients in bowl and mix well. The mixture should be moist enough to form a ball, without extra liquid.
Put mixture in prepared pan(s) and spread evenly. Bake for 30 minutes.
Remove from oven and cut into squares while still hot. Wait until the bars cool before trying to remove them from the pan.
Substitutions
Variations:
Replace apple juice with either:
- orange juice
- a mixture of 1/4 cup molasses and 3/4 cup water
- 1/4 cup molasses, 2 Tbsp dark rum or flavoring, and enough water to make one cup.
If you want to increase the molasses a bit, you can omit the sugar in the recipe.
Use dairy, egg, soy, corn, wheat, sesame and/or nut free ingredients and variations as needed. If avoiding wheat, be sure to use oats that are not cross contaminated with wheat.
Arroz Con Soy Leche

Made without milk, peanut, egg, tree nut, wheat, gluten, corn, fish, shellfish, and sesame
Ingredients
1/2 cup white rice, uncooked
1 1/2 cup water
1 cup soy milk
1/4 cup cane sugar
2 1/2 Tbsp raisins (optional)
1/2 stick cinnamon (optional)
Instructions
Bring rice and water to a quick boil in a pan, including cinnamon stick if desired. Reduce heat, cover and simmer for about 15 minutes or until water is absorbed.
Add soy milk, 1/4 cup cane sugar, and, if desired, raisins. Cook uncovered for about 10-15 minutes.
Remove from heat, take out cinnamon stick and cover. Let sit for a few minutes.
You can serve hot or cold.
Substitutions
Use diary, egg, corn, wheat and/or gluten free ingredients as needed.
