Outreach to physicians at AAAAI Annual Meeting |

Kids With Food Allergies exhibited at the February American Academy of Allergy, Asthma and Immunology (AAAAI) Annual Meeting in San Diego.

Quick survey update |

We are busy analyzing the wealth of information from the survey many of you completed last month. Thanks so much for giving us your views so we can plan the direction and
prioritize our "to do" list for long and short term.
The survey results affirmed that we are making a difference for those who are raising children with food allergies:

Family members gave KFA a 95% approval rating when we asked if KFA helps them deal better with food allergies.
-
Ninety-five percent (95%) of all respondents said they would recommend KFA to other parents of food allergic kids.
This is so wonderful to know!
We received hundreds of comments which we are going through one by one. Here are just a few I will share with you:
"Thank you! There have been days when I didn't know how we'd make it, and just visiting the site gave hope and strength. Your mission is strong and good and is helping others."
"Thank you so much for all that you do for the entire community. Your support means more to me and my family than you could ever possibly know. Thank you from the bottom of my heart!."

Spring has Sprung
Even if it's still a little cold where you live, it is now officially spring. There are many spring menu options featured in our database. These two recipes should get you started, and for more recipes from breakfast through dessert,

Apple Blueberry Tapioca Pudding
Recipe Created By: Hope
Made without milk, peanut, egg, soy, tree nut, gluten, wheat, corn, fish, shellfish, sesame, potato, and rice
Ingredients
1/3 cup tapioca, either Minute size, or larger pearls
1/3 cup sugar
4 cups sliced apples (peeling optional)
2 cups water
2 Tbsp apple juice or lemon juice
2 Tbsp margarine
2 cups blueberries
Instructions
Put all ingredients except for blueberries in large pot. Let stand for a few minutes, then bring to a boil.
Simmer about 10 minutes, stirring often, and add blueberries. Continue simmering another 5 minutes or until apples are tender.
Substitutions
Use dairy, soy, corn, wheat and/or gluten free ingredients as needed. Be sure to check juice for ascorbic acid if avoiding corn.
BLT Pasta Salad
Recipe Created by Kathy Przywara
Made without milk, peanut, egg, soy, tree nut, corn, fish, shellfish, and sesame
Ingredients
1/2 lb penne pasta
1/2 lb bacon, diced
2 Tbsp red wine vinegar
1/4 cup olive oil
1 small bunch basil
1 small bunch flat leaf parsley
1 clove garlic, pressed
to taste salt and pepper
2 cups cherry tomatoes, halved
1/2 head romaine lettuce, shredded
2 cups seasoned croutons
Instructions
Prepare pasta according to directions. Drain and run under cold water to stop the cooking.
In a wide frying pan, cook bacon until crispy. Remove from pan and drain on paper towels. Set aside.
Make dressing. Remove leaves from basil. Stack them and roll them into a tight tube. With a very sharp knife, thinly slice the tube. You will be left with long shreds. Do the same with the parsley - finely shred it. In a large bowl,
combine vinegar, pressed garlic, salt and pepper. Stir to combine. Slowly pour in the olive oil while continually whisking. Add herbs and stir to combine. Add cooled pasta and cherry tomatoes and toss to coat. If not serving immediately,
refrigerate. Bring back to room temp before assembling salad.
To assemble salad in a wide bowl, put down a bed of shredded Romaine. Add crispy bacon pieces to pasta and toss to combine. Arrange pasta on top of lettuce bed. Top with crouton. Garnish with additional parsley and/or basil if desired.
Comments
This is a great salad to take to a pot luck. I just take a large serving bowl along. I have the lettuce, croutons and bacon in ziplock bags and the pasta in a sealed bowl. Just assemble it when you get there and it looks fabulous and
doesn't get soggy and tossed around on the way!
This also makes a great light summer lunch!
I make my Croutons seasoned with olive oil, fresh pressed garlic, dried parsley flakes, and some salt and pepper. Sometimes I use a garlic bread seasoning and olive oil.
