Summer fun, summer challenges |
|
|
My 17 year old son is finishing up school today, and just like you, we are trying to plan for the summer time adventures ahead of us. Trust me when I say that as a food
allergic kid gets older, the summer travel challenges just change! Now instead of planning for day camp or family trips, I am planning for him to go to visit friends for week-long stays as well as a week-long church youth group trip to the
rural Appalachians, 30 minutes from the nearest ambulance and one hour from the nearest hospital! We've already started planning but still have lots more to do.
If you'd like to compare notes with other parents about traveling with food allergies, be sure to use the forums to post your questions or read through past or current discussions to gain some insight from experiences of others. Also, we
will be sending out the June issue of Support Net, our quarterly e-zine for Family Membership subscribers, next week, and this issue includes an article on some parent-tested strategies for making trips successful that should be
helpful as well.

Summer is here, and summer brings many treats that are often not safe for food allergies. Try these recipes to help you give your kids with food allergies a special summer beat-the-heat treat. For more recipes from breakfast through

Chocolate Soy Ice Cream And Variations
Recipe Created By: Mary Young
Made without milk, peanut, egg, tree nut, wheat, gluten, corn, fish, shellfish, sesame.
Ingredients
4 cups Vanilla Silk soy milk
1 1/2 cups sugar
1/2 cup cocoa powder
1 Tbsp vanilla extract
1 cup marshmallow creme (optional)
1/2 cup miniature marshmallows (optional)
1/2 cup peanuts (optional)
Instructions
Combine soy milk, sugar, vanilla, cocoa powder, and vanilla in blender and process at low speed until smooth. Pour mixture into ice cream maker canister.
Freeze ice cream as directed.
Comments
VARIATIONS:
* Marshmallow Revel - Swirl 1 cup marshmallow creme into chocolate ice cream immediately after freezing.
*Rocky Road - Swirl 1/2 cup of miniature marshmallows and 1/2 cup peanuts into chocolate ice cream immediately after freezing.
Substitutions
It is unknown whether this can be adapted to use a different milk alternative other than Silk brand soy milk. Be sure to verify ingredients and potential cross contamination risks are safe for your allergen set.
If making any of the variations, be sure to check to check the marshmallows or fluff for egg, corn syrup, or fish gelatin. Do not use peanut if avoiding peanuts.
Use dairy, egg, corn, wheat/gluten and/or nut free ingredients and options as needed.
Coconut Ice Cream
Recipe Created by Karen In Ohio
Made without milk, peanut, tree nut, soy, wheat, gluten, corn, fish, shellfish, and sesame
Ingredients
1 cup vanilla almond milk or vanilla rice milk
2 Tbsp arrowroot powder
1 cup sugar
1 large egg
1 egg white
4 cups unsweetened coconut milk
1 tsp vanilla
Instructions
Whisk the almond milk and arrowroot in a large saucepan until blended. Add the sugar and eggs, cook over medium-low heat, whisking constantly, until the sugar is dissolved and the mixture is slightly thickened, about 8 minutes, taking
special care NOT to boil the custard. Remove from the heat and allow the custard to cool slightly.
Whisk the coconut milk into the custard until well blended. Cool, stirring occasionally until cooled to room temp. Refrigerate at least 6 hours.
Stir mixture and process in an ice cream maker according to the manufaturer's directions. Store leftovers in the freezer.
Comments
This has a light coconut flavor. Adding more vanilla might mask that if you don't care for coconut.
Substitutions
Can use rice milk instead of almond milk. Can use cornstarch in place of arrowroot.
Use dairy, soy, gluten, and/or corn free ingredients if needed. If avoiding nuts, use rice milk rather than almond milk.
