Getting our kids ready for school |
|
|
Even though we're still in the heart (and heat!) of summer, starting school -- whether it's preschool, daycare, elementary or high school -- is on the minds of many of us
already! I know it can be a high-anxiety time for parents, especially if you're sending your child off to school for the very first time. All of the planning takes time and hard work, but it's worth it to keep our food allergic kids safe
and healthy.
Since it's a good idea to start early, this issue focuses on going back-to-school with food allergies. Included are active topics and recent discussion threads on topics related to back-to-school. We've added two new books to our

We thank all of the children who submitted artwork for this competition. We will use the other submissions to create some KFA e-cards to send to friends and family for the holidays. Runners up will also receive a certificate of

Food allergies: what you need to know
A new food allergy brochure from the Food and Drug Administration Food Allergies: What You Need To Know explains the Food and Drug Administration's allergen labeling rule. Available in English or Spanish, it also includes
information on food allergy symptoms and what to do when experiencing them. This new brochure is
accessible via the web and a printed version is available free from FDA's Center for Food Safety and Applied Nutrition.

Birds' Nests
Recipe Created By: Tracy Martin
Made without milk, soy, peanut, egg, tree nut, wheat, gluten, corn, fish, shellfish, sesame.
Ingredients
4 cups chow mein noodles
1 cup safe chocolate chips
1/2 cup peanut, soy, or other nut butter
Instructions
Melt chocolate chips and safe peanut/nut/soy butter on stove. Remove from heat, and stir in chow mein noodles. Press into muffin tin, making an indentation in the very center. Chill in refrigerator. Turn them out, put little jelly beans or
egg-shaped candies in the indentations.... you've made birds nests!
Substitutions
Verify ingredients of chow mein noodles and chocolate chips. This can be made using any safe "nut" butter.
To avoid wheat and/or gluten, this can be made with rice crispies instead of chow mein noodles. Note that most crispy rice cereal contains barley, a gluten grain.
Fun Twist Snack Mix
Recipe Created by Chance Family
Made without milk, soy, peanut, tree nut, wheat, gluten, fish, shellfish, and sesame
Ingredients
2 cups cereal of choice
2 cups rice cereal
1 cup chocolate graham crackers, broken up into bits
1 cup miniature marshmallows
1 cup raisins or dried cranberries
1 cup pretzels, broken into bits
12 ounces safe chocolate chips
1 Tbsp corn syrup
1/3 cup water
3 Tbsp Dari-free powder
1/2 tsp imitation almond extract
Instructions
In a large bowl combine cereals, graham crackers, marshmallows,raisins or dried cranberries, and pretzels.
In a small saucepan over low heat combine chocolate chips, corn syrup, and mixture of water and Dari-Free whisked together. Heat, stirring until melted and smooth.
Add imitation almond extract and drizzle throughout mixture. Stir to mix in and lay on wax lined cookie sheets. Place in freezer until hardened-- about an hour and ENJOY.
Substitutions
To make gluten free, choose gluten free cereals, broken rice cakes, gluten-free cookie bits, gluten free pretzels, and a cup of nuts or sunflower seeds if diet permits and gluten free extract.
Vary ingredients to suit your needs.
