    Our Medical Advisory Team has created the following frequently asked question (FAQ). It is currently featured as our Tip of the Week:

    What questions should I ask an allergist on an initial visit?

    When you first visit an allergist due to a concern of food allergy, there are many questions that both you and your doctor will want to ask of one another.

    To start, your doctor should ask you questions about the suspected allergy and the reaction that prompted your visit. Try to remember or write down as many of the details as you can about the time(s) you or your child ate the food in question, including:
    • How quickly did the reaction develop?
    • What symptoms occurred?
    • What other foods were eaten at the same time?
    • What treatments/medications were used?

  • Once it is your turn to ask questions, your interest will probably fall into two major categories - testing for the allergy and how to deal with and treat the allergy.

    "Iron Chef" KFA Food Competition
     
    The KFA Iron Chef competition continues to be a great success. Results are in from our second competition, with the secret without restrictions of gluten and soy. The winning recipe was Old Fashioned Apple Filled Cake Donuts, submitted by melkorey. All of the recipes are now in our Safe Eats Recipe Database, and are also listed below in the recipe section of this newsletter.

    The third competition is now underway! This contest will get you prepared for hosting an allergy-safe Super Bowl party, or just enjoying safe food with your family. The theme for this battle is "Tailgate Party Snacks", and the secret without restrictions are dairy and potato. All recipes are also free of peanuts, tree nuts, fish and shellfish.

    This month's wonderful recipes include Salsa Beef or Chicken Bakes, Asian Fusion Sausage Rolls, Super Bowls of Fruit Dip, Buffalo Chicken Dip, Avocado Wrappers with Honey Lime Dipping Sauce, Spinach and Artichoke Tailgate Dip, Baked Party Chicken Bites with Sweet and Sour Dipping Sauce

    Meet our volunteers
     
    Melanie Carver

    Melanie Carver-Cox lives in Seattle-Tacoma with her computer guru hubby Korey, and their two children, ages 7 and 4 years.

    "K" is 7 and has asthma, environmental allergies, a few food allergies, antibiotic allergies, atopic dermatitis, hypotonia (wears orthotics), GI & Urology issues.

    "T", who brought Mel to KFA, deals with atopic dermatitis, asthma, environmental allergies, EGID, GERD, Hyper IgE (tests allergic to nearly everything on SPT and RAST), airborne and contact allergic to peanut & milk, and he has had anaphylaxis many times (peanut, sesame, banana, milk, egg, latex). He spent over a year on Neocate formula-only and is now eating 20 foods.

    Melanie's educational background is in oceanography and pre-medicine studies. She and her family love the beach, whale-watching and going to zoos and aquariums.

    For the past several years, Melanie ran her own floral business and taught at the local community college. She's currently on sabbatical, since her volunteer work here at KFA and for her daughter's PTA are eating up all her time! She is also actively involved in legislative advocacy, including organizing political debates and becoming involved in many meetings with VIPs to help enhance education and advocate for children in the state of Washington.

    Melanie loves to cook and bake; being a vegan and working with limited ingredients has simply encouraged her creativity. Many of our members enjoyed her top 8 and gluten-free Old Fashioned Apple-Filled Cake Donuts recipe, which took first prize in last month's KFA Iron Chef Challenge.

    As a part of KFA, Melanie is currently the Publications Team Chair, which involves editing and organization of resources; she is also a Community Leader in several forums, some of which she launched. Most recently, she is the co-founder of our very popular Iron Chef Competition.

    So why does Melanie spend so much time in an already-busy schedule with KFA? She says, "If I hadn't found POFAK in 2004, I can't imagine what our lives would be like right now. With the help of other parents, T was properly diagnosed and treated. He (and I) survived extraordinarily well throughout all of his obstacles" including removing food and going Neocate-only at age 3 and traveling for days over the Rocky Mountains to get the medical care he's needed at National Jewish Hospital in Denver.

    "By giving most of my free time to KFA, I know I am reciprocating and helping out parents that are in the same shoes I was in 2-3 years ago. I have made long-lasting friendships here and they are solidified by our commitment to our children."

    We all value Melanie's contributions to KFA.

    Warm Food

    Food allergies don't keep you out in the cold! Now that winter is "officially" here for many KFA families, try these recipes for your own enjoyment or sharing with others. For more recipes from breakfast through dessert, visit our Safe Eats Recipe Database.

    Reminder: These are recipes donated by members and have not been tested in a test kitchen. Be sure to verify the safety of all ingredients.

    Crockpot Hungarian Goulash

    Recipe Created by Kathy Przywara
    Made without milk, peanut, egg, soy, tree nut, gluten, wheat, corn, fish, shellfish, and sesame

    Ingredients
    1 1/2 lbs. lean stew beef
    1/4 cup flour
    salt and pepper to taste
    2 Tbsp olive oil
    2 Tbsp Hungarian paprika
    small bag baby carrots
    8 ribs celery, diced large
    2 medium onions, diced large
    2 cloves garlic, minced
    water
    4 large potatoes, diced large (optional)
    1 1/2 cups frozen peas (optional)

    Instructions
    Cut meat into bite sized pieces. Coat meat with flour seasoned with salt and pepper. Be generous with the salt as this dish tends to take a lot of salt. Heat oil over medium-high heat in a large skillet and brown meat on all sides. Add more oil if sticking occurs. Add paprika and saute for about 1 more minute.

    Layer ingredients in crock pot and add water just to cover. Cook on low for 8-10 hours on until everything is tender. You can cook it on high for about 5 hours, on the stovetop in a heavy covered pot on a very low simmer, or in a tightly covered casserole in the oven at 325 degrees F. Stir occasionally, especially if using one of the quicker cooking methods.

    If using potatoes, add after 4 hours of cooking. Add them during the last 1 1/2 to 2 hours if using the faster cooking methods. Stir occasionally. Add peas during the last hour of cooking if using. Adjust seasoning before serving. If using potatoes, serve as is, otherwise serve over hot pasta.

    Substitutions
    Choose flour based on allergen-needs (wf, gf, etc).

    Baby carrots can be replaced by 4-5 large carrots cut in a large dice.

    Chocolate Chip Oatmeal Cookies

    Recipe Created by Karen Eck
    Made without milk, peanut, egg, soy, wheat, tree nut, corn, fish, shellfish, and sesame

    Ingredients
    1 3/4 cup wheat-free flour mix
    3/4 tsp baking soda
    1/2 tsp salt
    3/4 tsp baking powder
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    1 cup margarine
    2 Tbsp vinegar
    2 Tbsp water
    2 tsp baking powder
    1 1/2 cups brown sugar
    1/4 cup granulated sugar
    2 1/2 tsp vanilla
    1 cup chocolate chips
    3 1/2 cups quick cooking oats

    Instructions
    Preheat oven to 350 degrees F. Grease cookie sheets.
    Whisk together thoroughly flour, baking soda and powder, salt, cinnamon, and nutmeg.

    Mix together in separate bowl 2 Tbsp water + 2 Tbsp vinegar + 2 tsp baking powder. On medium speed, beat margarine, brown sugar, vanilla and sugar on medium speed until well blended.

    Stir the flour mixture into the margarine mixture until well blended and smooth. Stir in chocolate chips and oats.

    Drop the dough by heaping tablespoonfuls onto the sheets, spacing about 3 inches apart. With lightly greased hands, lightly press the cookies down to form 1/2-inch-thick rounds.

    Bake 6-9 minutes, until cookies are lightly browned all over and almost firm when lightly pressed in the centre of the top.

    Remove the sheet to a rack and let stand about 2 minutes, until the cookies firm slightly. Transfer cookies to racks to cool.

    These cookies freeze well.

    Substitutions
    If not avoiding eggs, can replace mixture of baking powder, water and vinegar with 2 eggs.

    Use dairy, soy, and/or corn free margarine as needed. Use corn and gluten free baking powder and vanilla as needed.

    Verify that chocolate chips are dairy, soy, corn, and/or peanut/tree nut free as needed. Can substitute raisins.
