We will be creating cards featuring children's artwork this year and invite your children to submit their creations! We will be creating an ALL-OCCASION card, and a HOLIDAY card. Your children are welcome to submit artwork for one or both cards. Please have your children use regular 8.5 x 11 inch sheet of paper for entries. [entry form]

AANMA Breathing Matters Advocacy Conference Washington, DC, May 5-7, 2008

This conference brings together medical care providers, patients, families, industry professionals and legislators to talk about critical allergy and respiratory issues. The conference includes training to become effective advocates at the national, state and local levels. The preliminary agenda includes topics ranging from media training to students rights to carry asthma and anaphylaxis medications to Internet advocacy, and more. [more information]

FAAN Annual Food Allergy Conferences

This year's conference theme is "Food Allergies: Living and Learning." Learn tips and strategies for managing food allergies. Conferences will be held in Baltimore, MD (March 29), Rosemont, IL (May 10) and Tarrytown, NY (May 31). [more Information]

Disney Channel to Rebroadcast Jo Jo's Circus Episode about Food Allergies

Tickled Pink, the Jo Jo's Circus Episode that teaches kids about food allergies, will be rebroadcast on the Disney Channel on February 28th. Check your television schedule to see what time it will play in your area.

Looking for Patients to Participate in Clinical Trial for FAHF-2

Researchers at Mount Sinai School of Medicine in New York City are recruiting patients for a study of a potential new therapy that could reduce or eliminate the risks associated with a life-threatening food allergy. They will enroll 18 patients between the ages of 12 and 45 who are allergic to peanut, tree nuts, fish, or shellfish. [more information]

Two Good Reasons for Reading Labels EVERY Time

"I bought some granola bars and my son, who has a cashew allergy, ate one. They do not print a bold list of the major allergens below the ingredients listing like most food companies do. Since I didn't see any major allergens listed, I thought they were safe. Not true!"

Fact: Current U.S. food labeling regulations do not require manufacturers to list major allergens in bold underneath an ingredient statement. The manufacturer has the option to include the major allergen name within the list of ingredients! Do not rely solely on the presence or absence of a bolded allergen statement underneath the list of ingredients.


"Chewy fruit flavored candy can contain egg. I almost didn't read the label because I never would have guessed! Also sour candy sometimes has milk."

Fact: Products made in different sizes or packaging may have different ingredients or cross contamination issues. Examples where this can occur include candies packaged in snack-size vs. standard-sized packages, low-fat vs regular-fat soup, and shelf-stable juices and milk alternatives vs. the refrigerated varieties.

Most parents feel the time pinch when trying to get dinner on the table, and when you're dealing with food allergies, it can be especially challenging. Pizza Round Steak

***Made without milk, soy, gluten, wheat, peanut, egg, tree nut, corn, fish, shellfish, sesame.

Ingredients
1 medium to large chopped green pepper
1 medium chopped onion
2 14 ounce jars pizza sauce
1 15 ounce can tomato sauce
1.5 pounds stew beef or steak cut into chewable sizes
1 box elbow noodles

Instructions
Saute chopped onion and green pepper with the stew meat until meat is cooked. Pour pizza and tomato sauces into either casserole dish or crock pot. Combine meat and vegetables with sauces. Cook in covered casserole for 1.5 hours in oven at 375F, or in crock pot on low for 4 to 5 hours. The meat is already cooked so you can add time depending on how tender you want it. Serve over cooked elbow noodles.

Comments
Try making before a family day - perhaps when you're going to the zoo! I put it in the crock pot and boil up the noodles before hand, and then we have our favorite meal. You get hidden vegetables and great taste. It looks like spaghetti so the picky eaters will go for it too.

Substitutions
Use gluten free pasta if necessary.

Check individual ingredients such as pizza sauce for your particular allergen needs.

Use dairy, egg, soy, corn, wheat and/or gluten free ingredients and options as needed.

Becca's Chicken Curry

Recipe Created by Becca Godleski
***Made without milk, peanut, tree nut, wheat, gluten, egg, corn, fish, shellfish, and sesame

Ingredients

2 cloves garlic
1 medium yellow onion, diced
1 medium Fuji apple, diced
28 ounces diced tomatoes
2-4 teaspoons curry powder
2 tablespoons gluten free flour mix
1 cup dairy/egg free mayo
4 tablespoons olive oil or other fat
3-4 cups diced cooked chicken

Instructions
In a large skillet, saute onion, garlic and apple in desired fat for about 5-7 minutes over medium heat.

Add can of tomatoes, flour mix, and curry to taste. Stir to mix well. Reduce heat and cover. Simmer for 10 minutes.

Transfer mixture to a blender or food processor and blend until smooth. Transfer to serving dish. Add approx 1 cup of dairy free/egg free mayo and stir. Add warm diced chicken and mix completely.

Serve over rice.

Substitutions
You can use any flour for your curry. It only needs to thicken a little. I have only used gluten-free combinations free of cornstarch.

You can adjust the amount of garlic and curry to your taste. I usually go with three teaspoons but I do not like things hot.

You can use any apple as long as it is sweet and firm. I like the Fuji for its size and taste. You can use a Vidalia onion, but a yellow onion gives more flavor. I tend to buy apples and onions that are about equal in size.
